This Week in Food

This week food-wise wasn't pretty.  I love Nigella Lawson but as the month wore down I felt myself getting a bit uninspired.  I'm not sure if it's the weeks of cold grey weather or the fact that J has been so rarely home for dinner but it felt like I was going through a lot of effort for not much result.  There may or may not have been a mini tantrum where I announced I quit.  If there was one of those I'm pretty lucky because I was the only one in the room (not that I'm saying there was).

After some recovery from the non-existent tantrum I asked a few questions regarding everyone's favorite meals.  That's how I found myself making Manwiches on Wednesday complete with frozen fries (the crinkle kind).  I did toast the buns which made them better.  I also made myself a side of Arby's fries that I'd found in the frozen section at the grocery store.  They taste like the real thing and I can fool myself into thinking they're better for me!


I also made Plain Chicken's Chicken and Ravioli Carbonara.  Mine wasn't nearly as pretty as hers and I used tortellini instead of ravioli but it was fantastic.  I think next time I may even leave out the chicken.  The sauce, the pasta and the bacon are so good that the chicken seems extra. Also good was that it was really quick and only took 1 pan.  This is definitely on my list for go-to quick meals.  I doubled the recipe for the 3 of us that were eating (1 of those 3 is a teenage boy) and we had enough plus enough for J to get 2 meals of leftovers.

  1. The carbonara looks delicious!! I've been craving something like this lately and it looks easy enough. I go back and forth with cooking meals as well. I love cooking but some days it seems like I'm the only one who really cares. Mostly I just want someone to tell me what they'd like for dinner (other than Mac and Cheese from the toddler and Spaghetti from the husband).

  2. My kids love love tortellini, so I might have to try that and make the same substitute as you.
